For Salad:
1/2 Red Cabbage, finely sliced
1 no. Apple, cut into matchsticks
1/2 Red Onion, thinly sliced
1-2 nos. Jalapeño, thinly sliced
1/2 cup loosely packed Mint leaves
1/2 cup Fresh Coriander, chopped
For Salad Dressing:
1 tbsp Apple Cider Vinegar
1 tsp Dijon Mustard
1 tsp Black Pepper Powder
1 tsp Lime Juice
1 tbsp Honey
4 tbsp Extra Virgin Olive Oil
1 tsp Kosher Salt
1 tsp Fresh Ginger, minced
Preparation
For Salad Dressing:
- Step 1: In a bowl whisk together apple cider vinegar, dijon mustard, black pepper powder, lime juice, honey, extra virgin olive oil, kosher salt and minced ginger. Set aside.
For Salad:
- Step 2: Thinly slice the onion and set aside. Cut the apples into quarters, then cut out the core from each piece. Cut the apples into thick matchstick shapes, drizzle with lime juice and stir. Slice the red cabbage into thin strands using a sharp knife. Set aside.
- Step 3: In a large mixing bowl, add red cabbage, apple, sliced onion, sliced jalapeño, mint and chopped coriander. Pour over the salad dressing and combine. Cover and refrigerate for at least two hours before serving.
