For Chicken Patty:

Prepare uncooked patties 6 to 8 hours ahead and refrigerate between parchment sheets. For longer storage, freeze uncooked patties for up to 3 months. Make the burger sauce in advance and refrigerate it tightly covered for up to a week.
Ingredients:
For Spicy Mayo:
1 cup Mayonnaise
1 1/2 tbsp Pickle Juice/ Lemon juice
1 tbsp Yellow Mustard
1 tbsp Red chili sauce
1 tsp Tobasco sauce
For Chicken Patties:
500 gm Chicken mince (I like using something about 5-7% fat)
1 no. Onion, (chopped)
4 nos. Garlic clove, (minced)
1 cup Fresh Cilantro, (chopped)
1 tbsp Mayonnaise
1 tsp Paprika powder
1 tsp Blackpepper powder
Salt to taste
2-3 tbsp Breadcrumbs
For the Burger:
1 tbsp Butter
Orange Cheddar Cheese
White Cheddar Cheese
Lettuce
Preparation:
For Spicy Mayo:
- Step 1: In a mixing bowl combine mayonnaise, pickle Juice/ lemon juice, yellow Mustard, red chili sauce and tobasco sauce, stir to combine. Keep aside.

For Chicken Patties:
- Step 2: In a mixing bowl combine minced chicken, chopped onion, minced garlic, chopped cilantro, mayonnaise, paprika powder, blackpepper powder, Salt to taste and breadcrumbs. Using your hand or a Spatula, gently mix to combine, being careful not to over mix.

- Step 3: Lightly wet your hands and shape the mixture into thick patties. Keep aside.

For the Burger:
- Step 4: Use a sharp knife to slice the burger buns in half. Keep aside.

- Step 5: In a frying pan melt butter and add the chicken patties. Over medium heat. Cook each side for 3-4 minutes or until cooked through.

- Step 6: Then push the chicken patties to one corner of the pan and add the sliced burger bun and toast for 2-3 minutes. Remove from the pan and keep aside.

- Step 7: Next place cheese on top of each chicken patty, cover and continue to cook until cheese is melted, 30-60 seconds. Remove from the heat and start assembling the burger right away.

- Step 8: Spread the spicy mayo on the cut sides of the toasted buns.

- Step 9: Top the bottom bun with lettuce, chicken patties, pickled cucumber and onion. Close with the top bun.

- Step 10: Serve immediately. Enjoy!!
