  • 1 tsp crushed black pepper

  • Salt to taste

  • Handful of Cilantro leaves, chopped

Preparation:

  • Step 1: Start by heating a heavy-bottomed pan with oil and 2 tbsp butter.
  • Step 2: Saute finely chopped garlic over medium heat for 2-3 minutes until fragrant.
  • Step 3: Next add milk, boiled potatoes, salt and crushed black pepper into the pan. Allow the mixture to simmer on low heat for 8-10 minutes.
  • Step 4: Afterwards, turn off the heat and use a potato masher to transform the potatoes in to a velvety texture.
  • Step 5: Then turn the heat on and add 1 tbsp butter and chopped coriander leaves and stir to mix.
  • Step 6: Finally, transfer the luscious mashed potatoes to a serving bowl, garnish with more coriander leaves and butter and serve. This dish promises a delightful combination of creamy textures and savory flavors.

Tips:

  • To get the best result always use potatoes with high starch content.

  • Make sure all the potatoes are cut into equal size pieces so they all cook evenly.

  • Drain all the water from the potatoes immediately once they are boiled.

  • To prevent lumpy potatoes, mash them right away once they are cooked.

  • Garlic can be skipped if you don’t like.

  • Herbs and spices of your choice can be added.

  • This recipe can be scaled easily to make for more serving.

  • Whole milk is my preference, but use whatever you prefer or have on hand.

  • Store any leftover mashed potato in an airtight container in the refrigerator for up to 5 days. If you are reheating on stovetop, you can add a splash of milk to loosen the potatoes as they’ll often stiffen in the fridge.
