Can you prepare the meatballs ahead of time?
Yes, you can prepare the meatballs ahead of time and freeze them for up to 3 months. This will help you save some extra time on a busy weeknight. If you have any leftovers, simply put them in an airtight container and store in the fridge for 3-4 days.
How do you reheat frozen meatballs?
Make sure to thaw the frozen meatballs overnight in the fridge. When you are ready to reheat them , add them to a pan on the stove or microwave for 1-2 minutes until warmed through.

Ingredients:
Chicken Meatballs:
400 gm chicken mince / chicken keema (I like using something about 5-7% fat)
½ cup shredded mozzarella
1 tsp onion powder
2 cloves of garlic, finely chopped
1 tsp Red chili, crushed
1 lemon zest
1 tsp Salt
1 tsp crushed black pepper
½ tsp Italian seasoning
Lemon Butter Sauce:
½ stick unsalted butter, melted
1 lemon zest
2 cloves of garlic, chopped
1 tsp rosemary, dried
½ lemon, juiced
1 tsp hot sauce (I used bhoot jolokia sauce)
Salt to taste
1 tsp crushed black pepper
200 ml Chicken stock
1 tbsp Parmesan, grated
½ cup fresh coriander leaves, chopped
Preparation:
Meatball:
- Step 1: Preheat your oven to 400°F or 200°C.
- Step 2: In a mixing bowl combine ground chicken, mozzarella, chopped garlic, crushed red chili, lemon zest, crushed back pepper, salt, onion powder and Italian seasoning, mix everything properly.

- Step 3: Shape the mixture into delectable balls and arrange them in a baking dish.

- Step 4: Bake meatballs for 15-20 minute or until perfectly cooked. Once done remove the meatballs from the oven and keep aside.
Lemon Butter Sauce:
- Step 1: Melt butter and infuse it with lemon zest, finely chopped garlic, lemon juice, rosemary, hot sauce, salt and black pepper and mix well.

- Step 2: Drizzle this luscious sauce over the meatballs, and then add chicken stock ,chopped coriander leaves and the richness of grated Parmesan cheese and return the meatballs to the oven and let them bake for 5-10 minutes, ensuring their succulence. Be cautious not to parch the meatballs.
