Can you prepare the meatballs ahead of time?

Yes, you can prepare the meatballs ahead of time and freeze them for up to 3 months. This will help you save some extra time on a busy weeknight. If you have any leftovers, simply put them in an airtight container and store in the fridge for 3-4 days.

 

How do you reheat frozen meatballs?

Make sure to thaw the frozen meatballs overnight in the fridge. When you are ready to reheat them , add them to a pan on the stove or microwave for 1-2 minutes until warmed through.

 

Serving suggestions:

  • For sides with Chicken Meatballs in Spicy Mango Tomato Sauce, try fluffy white rice or fragrant basmati rice.

  • Serve with creamy mashed potatoes or roti, paratha or naan or puri.

  • Serve your Chicken Meatballs in Spicy Mango Tomato Sauce over al dente spaghetti or linguine for a classic Italian experience.

Ingredients:

Chicken Meatballs:

  • 250 gm Chicken mince (I like using something about 5-7% fat)

  • 1 no. Onion, chopped

  • 1 tsp Red Chili Powder

  • 1 tsp Black Pepper powder

  • 1 tsp Parsley, dried

  • 1 tbsp Garlic, chopped

  • 1 tsp Salt

  • 3-4 tbsp Bread crumbs

  • 3-4 tbsp Olive oil

Spicy Mango Tomato Sauce:

  • 2 nos. Onion, chopped

  • 1 tbsp Ginger paste

  • 1 tbsp Red chili paste / Hot sauce

  • 1 tsp Cumin powder

  • 1/2 cup Tomato puree

  • 1/2 cup Mango puree

  • 1 tbsp granulated Sugar

  • 1 tsp Garam Masala

  • Salt to taste

  • 1/2 cup Fresh Coriander, chopped

Preparation:

Chicken Meatball:

  • Step 1: In a large mixing bowl, combine chicken mince, chopped onion, red Chili Powder, black Pepper powder, salt, dried parsley, chopped garlic, bread crumbs and mix everything properly.
  • Step 2: Next, moisten your hands with cold water before rolling meatballs so that the mixture doesn’t stick. Now, evenly divide the meatball mixture and roll each into a ball. Keep aside.
  • Step 3: Then heat oil in a large pot over medium heat.
  • Step 4: Once the oil is hot carefully add the meatballs and cook them until they are browned on all sides, turning them once at the halfway point.
  • Step 5: Once the meatballs are done, remove them from the hot oil with a tongs and set them aside.

Spicy Mango Tomato Sauce:

  • Step 6: In the same pot add chopped onion and fry for 7-8 minutes or until they are golden brown, on medium low heat.
  • Step 7: Then add ginger paste and saute for 2-3 minutes. Next add Homemade Red Chili Paste or any hot sauce of your choice and saute for 2-3 minutes on medium heat.
  • Step 8: Then add cumin powder, saute for few more minutes. Then add a splash of water and continue to cook for few more minutes.
  • Step 9: Next add tomato puree and cook for 5-6 minutes on medium heat.
  • Step 10: Then add mango puree, cook for 3-4 more minutes on medium heat.
  • Step 11: Then add water, sugar and salt, stir everything well.
  • Step 12: Now add the fried meatballs and cover & cook for 15-20 minutes or until cooked through.
  • Step 13: Once the meatballs are cooked, add Garam Masala and chopped fresh coriander, stir everything well.
  • Step 14: Serve hot with plain rice or creamy mashed potatoes or over a bed of pasta or roti, paratha or naan or puri. Enjoy!!
