The Watermelon-Ginger-Mint popsicles are a delightful, low calorie summer treat that everyone will adore. Quick to prepare, refreshingly tasty and healthy, they are perfect for both kids and adults. I love making popsicles when watermelon is in season, capturing the essence of summer in every bite.
On the longest day of the year sharing this iconic summer favourite feels just right. I have fond childhood memories of juicy and fruity popsicles dripping down my hands in vibrant colors of orange, purple and green, melting faster than I could lick them in the summer heat. Nothing says summer quite like a frosty popsicle.
One of my favourite things about summer is the abundance of refreshing, in-season ingredients, especially watermelon. I’m completely in love with it. The combination of watermelon, ginger, and mint in these popsicles was serendipitous, yet it turned to be one of the best flavour combination of summer.
Watermelon, being about 90% water, is naturally one of the the most refreshing ingredients. This made the recipe incredibly easy because there was no need to add any additional liquid that might dilute the flavours. As a result, you get an intense burst of flavour in every bite. The mint is no-brainer addition. Just the smell of mint is refreshing and it elevates these popsicles to new level. The mint’s cool, invigorating taste made me feel like I was swimming in air conditioning. On the hot day I made these, they cooled me down completely.
These Watermelon-Ginger-Mint popsicles are not only perfect for kids and picnics but also for entertaining guests with minimal effort or a refreshing snack for yourself too. They take just about 10 minutes to make, and freezer does the rest of the work. Give them a try, and the flavour of summer delight your taste buds.
Ingredients
2 cups Watermelon chunks
1/2 cup Fresh Mint leaves
2 tsp Fresh Ginger root, grated
1 tsp Black Salt
Preparation
- Step 1: In a blender jar, combine all the ingredients and blend to puree.


- Step 2: Pour into popsicles molds and cover with lids. Place the mold in the freezer for 1 hour. Then remove and insert popsicle sticks and return to the freezer again, for 24 hours.


- Step 3: To unmold the popsicles, simply run the outside of the mold under tap water and pull out the popsicles gently from the mold.
- Step 4: You can serve them immediately, or place them in a small plastic ziplock bag and put it in the freezer and serve later.
Pro tips:
Before you freeze your mixture, savor its taste and fine-tuned it to perfection. Adjust the elements as needed- adjust sweetness.
Invest in quality popsicle moulds like BPA and phthalate free.
