Ingredients

  • 3/4 cup Finger Millet/Ragi Flour

  • 3/4 cup Oats, powdered

  • 1 tsp Baking powder

  • 1 tsp Baking soda

  • A pinch of salt

  • 3/4 cup Powdered Sugar

  • 2 nos. Mango, pureed

  • 1/3 cup Oil

  • 1 tsp Mango essence

  • 2 cups Mango, chopped

  • 1 tbsp Coconut, chopped

  • 25 gm Aam satta/ Aam Papad/ Mango leather, chopped

  • 1/2 cup Brown sugar

Preparation

  • Step 1: In a small bowl combine the ground flax seeds and warm water and set aside to thicken.
  • Step 2: In a mixing bowl, whisk together powdered oats, Finger Millet/Ragi Flour, baking powder, baking soda and salt. Set aside.
  • Step 3: In another large mixing bowl, whisk together oil, flax seed mixture and powdered sugar and give it a mix.
  • Step 4: Then add fresh mango puree and mango essence, give everything a good mix.
  • Step 5: Pour dry ingredients into the wet ingredients. Mix together until the flour mixture is almost incorporated.
  • Step 6: Then fold in chopped mango, coconut and Aam satta/ Aam Papad/ Mango leather. Mix everything properly until you no longer see flour. Don’t over mix or you’ll end up with dry and tough muffins.
  • Step 7: Preheat the oven to 180ºC.
  • Step 8: Grease the muffin tin properly. Evenly divide the batter into the tray, filling each about three quarters full. Sprinkle the top of each with some brown sugar.
  • Step 9: Bake @180ºC for 25 minutes or until a skewer inserted into the middle comes out clean.
  • Step 10: Leave them in the muffin tin for 10-15 minutes and then transfer onto a cooling rack to finish cooling.

Pro tips:

  • 1 Egg substitute is 1 tbsp grounded Flax seeds+ 3 tbsp warm water.
