Ingredients for Strawberry Ice Cream:
Strawberries: The star ingredient of the ice cream is fresh and ripe strawberries. Roasting the strawberries not only reduces excess moisture, preventing the formation of unwanted ice crystals, but also intensifies the natural sweetness and aroma of the berries.
Whole Milk and Heavy cream: Whole Milk and Heavy cream enhances the creaminess of the ice cream base, enriching the texture with its fat content.
Condensed Milk: Condensed milk further elevates the concoction, absorbing excess liquid while boosting the non-fat solids ratio, ensuring a luxuriously smooth finish.
Food Colouring (optional): A dash of red food colour adds a vibrant hue, though the strawberries natural colour often suffices.
Storage tips:
To store strawberry ice cream, use an airtight container or a ziplock freezer bag. Consume within a few weeks for optimal flavour.
Ingredients:
500 ml Half & half
1 kg Fresh and ripe Strawberry, hulled and halved
1 cup Fresh and ripe Strawberry, finely chopped
2 tbsp Granulated Sugar
400 ml Sweetened Condensed Milk
1-2 drops Red food colour, optional
Preparation:
Roasting Strawberries:
- Step 1: Place the strawberries on a tray and sprinkle over sugar. Toss them through and then spread them out in a single layer.
- Step 2: Roast the strawberries in a preheat oven @ 160°C for 45 minutes. Roasting halfway, remove from oven and toss the strawberries, then return to the oven until they are done roasting. Careful not to burn them.
- Step 3: Once done roasting, transfer them to a blender and blend them mostly smooth. Keep aside to cool.
Ice cream:
- Step 4: In a large mixing bowl add half & half and whip lightly. Then add condensed milk and whip it lightly.

- Step 5: Then add roasted strawberry puree and fold through gently.

- Step 6: Then add food colouring and gently fold through until it’s a uniform pink colour.

- Step 7: Next transfer the mixture into a container and cover with lid, freeze for 12 hours.

- Step 8: After 12 hours, transfer the frozen ice cream into a blender and blend until smooth.

- Step 9: Then transfer the mixture into a container and freeze. You can repeat this process of blending the frozen ice cream and freezing again for few more times, to achieve a smoother and creamier consistency ice cream.

- Step 10: After you are satisfied with the texture of your ice cream and before freezing it add chopped fresh strawberries and stir properly.

- Step 11: Sprinkle some chopped strawberries on top and cover with a lid and freeze for 24 hours.

- Step 12: Remove from the freezer and scoop with ice cream scooper. Serve in cones or bowls. Enjoy!!
