Filled with scrambled eggs, cheddar cheese and caramelized apples and onions, these burritos are a hit any time of day. Sausages: Sausages, whether bangers, turkey, chicken or bratwurst, adds rich flavour to the filling. Simply remove the casings before browning them in a skillet.
Eggs: Eggs are scramble in butter with a pinch of salt and freshly cracked pepper create a creamy texture.
Onion: Feel free to use white or red onions.
Apple: The sweetness of caramelized apples is the star of this show. By slowly cooking the apples with sugar, butter and balsamic vinegar, their natural sugars caramelize, transforming the fruit into a rich, sweet and tangy topping that adds depth and a touch of indulgence to the dish.
Fennel: Fennel, with its subtle licorice-like flavour, offers a pleasant contrasts to the sweet caramelized apples. It brings a hint of freshness and a unique herbal undertone, balancing the dish’s overall profile.
Butter: Use either salted or unsalted butter to enhance flavours.
Oil: Oil is essential for cooking the sausage, onion and apple.
Seasonings: Season with salt and freshly ground black pepper to taste.

Yes, the Sausages, Caramelized Apples, Onions and Fennel Burrito can be made ahead. Wrap them in foil and refrigerate for up to two days. When ready to eat, place them on a baking sheet and heat in oven. This makes them a convenient, delicious option for busy mornings.
Ingredients
1 tbsp Oil
2 tbsp Butter
4 nos. Egg
2-3 nos. Sausage (sliced)
1 no. Apple (sliced)
1 no. Onion (sliced)
1 tbsp Brown Sugar
1 tbsp Balsamic Vinegar
Salt to taste
1 tsp Freshly Cracked Black pepper
1 tsp Fennel seeds
1/2 cup Cheddar Cheese
Preparation
- Step 1: Heat oil in a skillet, add the sliced sausages and fry until golden, keep aside.


- Step 2: In the same skillet add fennel seeds in the remaining oil. Then add sliced apples and onion and sautée for 2-3 minutes on medium-high heat.


- Step 3: Add salt, brown sugar, continue to cook, stirring constantly, until the sugar is lightly caramelised. Then add 1 tbsp butter and balsamic vinegar to deglaze the pan and keep aside.


- Step 4: Crack eggs into a mixing bowl, add salt and freshly cracked black pepper, whisk together.


- Step 5: Melt 1 tbsp butter in the same skillet, add egg mixture. Cook eggs slowly on lower heat, stirring and breaking into pieces occasionally until eggs are set, the way you like them.


- Step 6: For assembly, top the tortilla with some eggs, fried sausages, caramelized apple & onion and grated Cheddar cheese.


- Step 7: Fold in the edges and roll from the bottom tightly. Griddle the burrito in a non-stick pan set over medium heat for 1-2 minutes per side before serving. Serve with sour cream, salsa or hot sauce. Enjoy!!
