Egg: Lightly seasoned and whisked well for fluffy results. Scrambled is classic, but cook them your favorite way.
Sausage: Minced sausage adds a savory punch and makes the tacos more filling.

Ingredients
3 nos. Corn Taco
4 nos. Sausage, minced
2 Eggs
1 no. Potato, diced
1 no. Onion, finely chopped
1 tbsp Garlic, minced
1 tbsp Oil
1 tbsp Butter
Salt to taste
2 tsp Black pepper powder
1 tsp Paprika Powder
1 cup Mozzarella Cheese, grated
1 cup Sharp Cheddar, grated
Handful of Fresh Coriander, chopped
Preparation
- Step 1: Heat oil in a pan and add chopped onion, fry for few minutes. Then add minced garlic and fry for minutes.
- Step 2: Then add diced potatoes, salt, pepper and paprika and stir to combine. Cover and cook the potatoes for 10-15 minutes on low heat or until the potatoes are cooked through.
- Step 3: Then add the minced sausage and cook for 5-6 minutes on medium heat. Remove the pan from heat.
- Step 4: Crack eggs into a bowl, add 1 tsp salt to taste, 1 tsp freshly cracked black pepper and whisk together. The more you whisk the eggs, the fluffier and softer the eggs will be.
- Step 5: Heat a pan with butter on low heat. Then add in the egg mixture and start mixing continuously, remember to be gentle and bring the eggs from the outside to the inside, about 6 minutes after adding the eggs, they should be really creamy but have texture to them and be fully cooked through. Remove the pan from the heat.
- Step 6: Arrange the tortillas in a baking tray. Add potato & sausage filling in the tortillas first, followed by scrambled eggs and top with grated mozzarella and Cheddar.
- Step 7: Preheat the oven @180°C. Bake the tacos for 25-30 minutes.
- Step 8: Sprinkle with fresh cilantro and serve immediately. Enjoy!!
