Ingredients
350 grams prawn
1 medium size onion, chopped
3-4 no. Garlic cloves, finely chopped
2 no. Green chili, sliced
1/2 cup cilantro leaves, chopped
1 tbsp hot sauce
1 tbsp mayonnaise
salt to taste
1/2 cup all purpose flour
2 cup bread crumbs
1-2 eggs
vegetable oil, for deep frying
Preparation
Start by removing heat and shell of the prawns, but leave the tail portion intact. Then devein the prawn and thoroughly clean them with water and keep aside.
Take half of the prawns (approx 6-8 no.) and use a knife to carefully butterfly each prawn without cutting all the way through. This technique creates a pocket for the flavourful mixture that will be added later. Set these prawns aside for now.
Now take remaining prawn and mince them either with blender or a chopper. This minced prawn forms the base of the mixture that will be combined with the other ingredient
In a mixing bowl, combine the minced prawn with chopped onion, green chili, garlic, cilantro, mayonnaise, hot sauce and salt and stir everything properly to ensure even distribution of flavours.
Take a spoonful of the prawn mixture and carefully scoop it onto each butterflied prawn. Continue this process until all the prawns are filled with the delight mixture.
To create a crispy exterior, coat each prawn in all purpose flour, then dip in beaten egg and then coat in bread crumbs. Then refrigerate the prepared cutlets for 1 hour. This step helps the coating set and adhere better during the frying process.
Heat oil over high flame. The ideal oil temperature for frying cutlet is around 165°C( 325°F) or you can test by dipping wooden spoon into the oil, if small little bubbles form around the spoon, the oil is ready. Fry the cutlets until they turn golden brown. Flipping them a couple of times ensures even cooking. Once they are perfectly cooked, drain the cutlets on a paper towel to remove the excess oil.
Prawn cutlets taste best when served warm with ketchup, sweet chili sauce or home-made aioli, to awaken your taste buds. These delightful cutlets can also be served with fresh salads and seasoned fries for a complete and satisfying meal.
