Ingredients
For Marinating the Prawns:
150 gm Prawns, shelled & deveined
1 tsp Red Chili Flakes
2 tbsp Extra Virgin Olive Oil
1 tsp Salt
For Aglio E Olio:
250 gm Dried Spaghetti
1 litre water
1 tbsp Salt
4-5 tbsp Extra Virgin Olive Oil
1 tbsp Garlic cloves, sliced
1 tbsp Parsley Stems, chopped
1 tsp Red Chili Flakes
1/4 cup Pasta water
Garnish:
1 tbsp Fresh Parsley, chopped
1/2 cup Parmesan cheese, grated
1-2 tbsp Extra Virgin Olive Oil
Preparation
- Step 1: Marinate the prawns with red chili flakes, extra virgin olive oil and salt, mix well. keep aside.


- Step 2: Boil water and 1 tbsp salt in a saucepan, then add the pasta and cook till al dente and strain.


- Step 3: Heat olive oil in a pot, add sliced garlic and chopped parsley stems, saute on medium heat for 2-3 minutes or until fragrant.


- Step 4: Then add red chili flakes, saute for a minute and add marinated prawns and cook for 3-4 minutes or until pink and firm.


- Step 5: Add the pasta water to the pot and bring to a boil. When the pasta water has reduced a little and thickened into a sauce, turn off the heat and toss drained spaghetti in the sauce and mix properly.


- Step 6: Serve the pasta immediately, top with some grated parmesan cheese, drizzle of extra virgin olive oil and some chopped parsley. Enjoy!!
Pro tips:
Always add pasta to boiling water, cooking until al dente and reserve some pasta water to thicken the sauce.
Cook the prawns over medium-high heat to avoid overcooking.
