The Ultimate Potato Soup | Easy Potato Soup Recipe

Starch in potatoes will help to thicken soup and it may also thicken upon cooling, so add a bit of broth or cream when reheating to reach you desired consistency.

Ingredients

Croutons:

  • 2 pcs. Bread slice

  • Salt to taste

  • 1 tsp Italian seasoning

  • 1 tbsp olive oil

Potato Soup:

  • 4 nos. Potatoes (cubed)

  • 1 no. Onion (chopped)

  • 5-6 nos Garlic cloves (minced)

  • 1 tbsp Olive oil

  • 2 tbsp Butter

  • 1 tsp Black pepper

  • 2 cup Whole milk

  • 2 cups Water

  • Salt to taste

  • 2 heaped tbsp Sour cream

  • 2 tbsp Cheddar cheese

  • 1 tsp Italian seasoning

     

Garnish:

  • 1 tbsp Sour cream

  • 1 tbsp chopped cilantro

  • 1 tbsp cheddar cheese

  • Croutons

Preparation

Croutons:

  • Slice the bread into small chunks and make sure the croutons be uniformly sized so that they cook evenly.

  • Spread out the croutons onto a baking sheet in a single layer.

  • Then sprinkle salt, Italian seasoning and olive oil over the croutons.

  • Bake @180°C for 10-12 minutes in a preheated oven.

  • Once they are baked let them cool until they reaches room temperature and store in a sealed container.

Potato Soup:

  • In a large pot, heat olive oil and butter over medium heat. Add minced garlic and saute for few minutes, then add chopped onion and saute until they become translucent and fragrant, about 5 minutes.

  • Then add the diced potatoes to the pot and saute for another 2-3 minutes.

  • Then add black pepper powder and salt to taste and saute for another 3-4 more minutes.

  • Next add chicken or vegetable broth or water and milk, ensuring that the potatoes are fully covered. Then reduce the heat to a simmer and cover and let cook for 20-25 minutes or until the potatoes are tender and can be easily pierced with a fork.

  • Then turn off the heat and add sour cream and mix everything properly.

  • Use an immersion blender to puree the soup until smooth. If you don’t have immersion blender, carefully transfer the soup in batches to a counter top blender and blend until smooth. Be cautious when blending hot liquids, as they can splatter.

  • Next add cheddar cheese and Italian seasoning and mix everything properly. Adjust the seasoning if needed.

  • Serve the creamy potato soup hot, garnished with cream, chopped cilantro, cheddar cheese and croutons. Enjoy the creamy, comforting goodness of homemade potato soup.
