Pomelo Paloma carry a lyrical charm in both name and taste, a cocktail that feels like poetry poured into a glass. Often considered a close relative of the margarita, the paloma highlights the bright, citrus forward flavours of lime and grapefruit with tequila at its heart. Traditionally, it’s mixed with grapefruit soda for a lighter sweet, fizzy finish, though fresh juice variations are equally celebrated, a salted rim and a squeeze of lime complete its simple elegance.
Pomelo is a fascinating citrus fruit with a history that stretches back centuries. Often referred to as the “grandparent” of the grapefruit, it is one of the oldest known citrus varieties, believed to have originated in Southeast Asia. Over time the fruit travelled across continents and eventually played a role in the creation of modern grapefruits when it was crossed with sweet oranges.
At fist glance, a pomelo looks like an oversized grapefruit, but there are several distinct differences. The rind is notably thick, almost cushiony, which makes peeling a little more labour-intensive but also protects the fruits delicate interior. The flesh itself varies in color, ranging from a gentle blush pink to a pale golden yellow, depending on the variety. While it shares a tangy citrus character, the flavour is less sharp than grapefruit- softly floral with a hint of natural sweetness that feels refreshing rather than puckering. Not only are they beautiful to look at, but their aroma is also remarkable, even uncut, the fruit releases a fragrance reminiscent of citrus blossoms. Once sliced open, the scent becomes even more intoxicating, filling the air with fresh, floral notes.
While the classic cocktail relies on grapefruit, pomelo offers a seasonal twist that’s as refreshing as it is intriguing. Pomelo juice, with its blushing hue and layered notes of sweetness, tartness and subtle bitterness, transforms the drink into something both seasonal and unique. It cuts through richness while still bringing warmth and vibrancy, ideal for colder days when a bright cocktail feels like sunshine in a glass.
The paloma itself carries a name often said to mean “dove” in Spanish, but some believe its roots may trace back to pomelo, the Spanish word for grapefruit. Whatever the origin, the cocktail has secured its place as a beloved tequila-based classic- crisp, balanced and endlessly adaptable.
Ingredients
90 ml Fresh Pomelo Juice
60 ml Tequila Blanco
15 ml Lime Juice
15 ml Simple Syrup
Ice Cubes
Club Soda
Citrus Twist, for garnishing
Preparation
- Step 1: Thoroughly wash the pomelo and dry it. Carefully cut a thin strip of peel, trying to avoid too much of the bitter white pith (the white part of the rind)). Then cut off the rough edges of the peel, to form a rectangle cut a diagonal line in the middle of the peel.
- Step 2: Transfer the pomelo fruit in the blender with water and process to get pomelo juice. Then strain the pomelo juice.
- Step 3: In a rock glass, combine pomelo juice, tequila, lime juice and simple syrup, stir to combine. Then add ice cubes and top with club soda.
- Step 4: To garnish with the pomelo peel give it a little twist then place it on the edge of the rock glass and serve immediately. Enjoy!!
