Watermelon doesn’t always get the credit it deserves behind the bar, but this summer staple is more than just a picnic side- it’s a cocktail secret weapon. Its crisp, juicy character can elevate all kinds of drinks, from tropical rum cocktails to tangy tequila classics. But one of the most unexpected- and delightful- pairings is watermelon and gin. The peppermelon, a standout cocktail created by San Francisco bar veteran H. Joseph Ehrmann, makes a strong case for why this combo belongs in your regular rotation.

At its heart, the peppermelon is a simple, refreshing drink built for summer sipping. It starts with a backbone of dry gin. The gin’s herbaceous and citrusy notes play beautifully with the natural sweetness of fresh watermelon juice.

What sets the peppermelon apart, though, is its pepper honey syrup. This ingredient brings warmth and complexity, tying the drink together with a spicy-sweet edge. It’s a great ingredient to have on have hand to add a twist to other honey-based cocktails, too.

Add a splash of fresh lemon juice to brighten everything up, and you’ve got a cocktail that hits all the right notes- sweet, tart, spicy and incredibly refreshing. Ingredients

For Black Pepper Honey Syrup:

  • 2 tbsp Black Pepper, crushed

  • 1 cup Honey

  • 1 cup Water

For Peppermelon Cocktail:

  • 1 cup Watermelon, cubed

  • Ice cubes

  • 60 ml Gin

  • 30 ml Lime Juice

  • 30 ml Black pepper Honey syrup

  • 60 ml Watermelon juice

For Garnish:

  • 2 tbsp Black Pepper powder

  • Watermelon Cube

Preparation

For Black Pepper Honey Syrup:

  • Step 1: In a saucepan, combine water and crushed black pepper and cook for 5-6 minutes. Combine the black pepper mixture with honey. Allow the syrup rest for 1-2 weeks.

For Peppermelon Cocktail:

  • Step 2: In a cocktail shaker, combine ice cubes, lime juice, black pepper honey syrup, watermelon juice and gin and shake until well-chilled.
  • Step 3: Double strain the cocktail. Coat one side of watermelon cube with black pepper powder.
  • Step 4: Fill a cocktail glass with Peppermelon cocktail and garnish with the watermelon cube. Enjoy!!
