Parsi Sambhar Masala | Kitchenstagram

Parsi Sambhar Masala, distinct from South Indian Sambhar, is a fragrant spice blend integral to Parsi Cuisine. It’s famously used in Dhansak, a signature dish, and is also used in other preparations like vegetable and meat dishes. This masala infuses dishes with vibrant colour and aroma, showcasing a unique flavour profile that sets it apart. It’s versatility makes it a cornerstone of Parsi culinary tradition, elevating both meat and vegetable recipes with its rich, complex character.

Ingredients

  • 1/4 Fenugreek Seeds

  • 1 tsp Mustard seeds

  • 1 tsp Black peppercorn

  • 1 tsp Cloves

  • 1.5 inch Cinnamon

  • 1 tbsp Turmeric powder

  • 1/4 cup Red Chili Powder

  • 1/2 tsp Asafoetida powder

  • 1 tsp Salt

  • 1-2 tbsp Sesame Oil (hot)

Preparation

  • Step 1: In a grinder add fenugreek, mustard, black pepper, cloves & cinnamon to a create a spice mix.
  • Step 2: In a mixing bowl, add turmeric powder, red chili powder, asafoetida and salt, mix well. Add hot sesame oil and mix properly.
  • Step 3: Use immediately or transfer to a glass jar with a tight-fitting lid and store for up to three months.
