Ingredients needed for Papas Con Huevo:

  • Potatoes: Use firm potatoes that hold their texture when fried or sautéed. Cut them into small even cubes to help them cook quickly and evenly, creating that perfect golden crisp.

  • Eggs: Beat the eggs lightly with a touch of salt and pepper before adding them to the pan. This makes them easier to mix with the potatoes and gives a soft, fluffy finish.

  • Garlic: Garlic is the key flavour in this dish. Minced garlic adds intense flavour to the dish.

  • Chillies: I have used bullet peppers. Choose any fresh chili you like-jalapeno, serrano, Thai chilies.

  • Butter: Butter adds depth and richness while helping the potatoes brown beautifully.

  • Salt & Pepper: Season generously with salt. Pepper is optional but brings a subtle warmth that enhances the potatoes and eggs.

Serving Suggestions:

Papas Con Huevo is one of those comforting dishes that fits perfectly into almost any meal of the day. Whether you’re enjoying it fresh off the stove for breakfast or repurposing leftovers for lunch, there are endless ways to serve and enjoy this classic Mexican favourite. A sprinkle of fresh cilantro or green onions adds a brightness, while a squeeze of lime gives the dish a zesty lift. If you love spice, try topping your plate with a spoonful of your favourite salsa or hot sauce or ketchup. Serve alongside creamy refried beans or Mexican rice to create a heartier meal. A side of sliced avocado or guacamole not only adds healthy fats but also balances the savory notes of the dish.

Storage Tips:

Let the Papas Con Huevo cool completely before storing. Keep leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, place the cooled mixture in freezer-safe bags or containers, remove excess air and freeze for up to 3 months- just note that the eggs may become a bit softer after freezing. When ready to enjoy again, reheat gently in a skillet over low heat or microwave in short intervals, stirring occasionally to heat evenly. If it feels dry, add a splash of water or a drizzle of oil while reheating to bring back its fresh texture and flavour.
