2 tsp Garlic powder
1 tsp Paprika powder
1 tsp Black pepper powder
1 tsp Salt
1 tsp Dried Oregano
1 tsp Dried Thyme
2-3 tbsp Sun dried Tomato oil (Tomato soaked oil)
1 tbsp Butter
Gravy:
1 tbsp Butter
4 Garlic cloves, Thinly sliced
1 tsp Homemade Red chili Paste/ Hot sauce
400 ml chicken stock
250 ml Heavy Cream
10-12 Halved Sun dried Tomatoes, chopped
4 tbsp Parmesan Cheese, grated
1 tsp Dried Thyme

Preparation
- Step 1: Cut the regular chicken breasts in half horizontally to form flat fillets and cut them in halves.


- Step 2: For a tidy process, lay the chicken breast between a plastic sheet – an optional but neat step. Then pound the chicken breasts using a rolling pan or a meat pounder until they are between 1/8 and 1/4-inch thick. This method ensures even cooking and tender result.


- Step 3: Mix flour, garlic powder, paprika powder, black pepper powder, salt, dried oregano, dried thyme in a plate. Coat the chicken breasts with the flour-spice mixture and keep aside.


- Step 4: Heat sun-dried tomato oil and butter in a skillet and fry the chicken breasts on medium-high heat. Flipping once, until the chicken is lightly golden and just cooked through, about 3 minutes total. Transfer the chicken to a plate and set aside.


- Step 5: Next add butter to the pan and let it melt. Then add sliced garlic and saute for a minute or until fragrant.


- Step 6: Then add the chopped sun-dried tomatoes and saute for 4-5 minutes. Next add chicken stock, Homemade Red Chili Paste or hot sauce and salt and mix everything properly.


- Step 7: Let the gravy come to a boil. Then add cream and fresh basil and let the sauce simmer for a minute.
