Mangoes are a versatile fruit that can be used in a variety of recipes like popsicles or mango sauce or for desserts and overnight oats. However, my favourite way to enjoy mangoes is in drinks. Instead of the usual black and brown boba pearls, why not make mango boba pearls and elevate your bubble tea experience? These mango boba pearls are chewy like traditional tapioca but bursting with mango flavour, making them irresistible. So, ditch the plain boba and level up your bubble tea game with this simple, homemade Fresh Mango Boba milk recipe.

What is BOBA?

Boba is also known as bubble tea or milk tea, is a drink that originated in Taiwan in the 1980s and has since gained worldwide popularity. Typically, boba combines tea, milk and its signature chewy tapioca pearls. These tapioca pearls, made from cassava root, have a unique texture and sweet flavour that add an enjoyable element to the drink. Boba comes in various flavours, often featuring fruits chocolate, spices and other ingredients, making it a versatile and fun beverage found in many coffee and bubble tea shops especially in larger cities.

Ingredients for Mango Boba Milk:

  • Tapioca Flour: The boba pearls in bubble tea are traditionally made with tapioca flour or starch. This ingredient gives the pearls their signature chewy texture and glossy appearance when cooked. It’s the essential element in creating perfect boba pearls.

  • Mango: With mango season in full swing, its ideal time to use ripe dark coloured mangoes for a rich flavour and vibrant colour in your boba pearls.

  • Milk: Full cream milk enhances the richness and flavour, but you can use any milk you prefer for this recipe.

  • Sugar: A touch of sugar sweetens the mango and elevates its flavour. Avoid using liquid sweeteners for the best results.

     

Ingredients

For Fresh Mango puree:

  • 1-2 nos. Mango

  • 1 tbsp Sugar

For Mango Boba Pearls:

  • 1/2 cup Tapioca Flour

  • 1/4 cup Mango puree

  • Simple sugar syrup

For Mango Boba Milk:

  • Cooked Mango Boba pearls

  • Ice cubes

  • Mango puree

  • Whole Milk

Preparation

For Fresh Mango puree:

  • Step 1: Cut one mango into chunks, transfer it into a blender jar with sugar and blend until you get a smooth puree. Keep aside.

For Mango Boba Pearls:

  • Step 2: In a mixing bowl, combine half of the tapioca flour and mango puree and mix well.
  • Step 3:  Once the tapioca flour is completely incorporated, heat this mixture in a microwave for 1 minute at 15 seconds intervals. Now you will see the mixture will thicken.
  • Step 4: Add rest of the tapioca flour and knead it well for a few minutes so that the whole thing comes together to form a smooth dough.
  • Step 5: Then, roll the dough into long logs and cut them into small portions. Make small pearls from each portion by rolling the dough between your palms.
  • Step 6: Next, boil them in boiling water for 15 minutes or until they are shiny and translucent.
  • Step 7: Strain them and transfer them into a bowl. Coat the tapioca pearls with sugar syrup or honey, to prevent them from sticking.

For Mango Boba Milk:

  • Step 8: In a glass, add cooked mango boba pearls, then add ice cubes.
  • Step 9: Next, layer with some mango puree and milk.
  • Step 10: Serve chilled Mango Boba Milk. Enjoy!!

Pro tips:

  • As the mango boba pearls contain fresh mango, they doesn’t have 6 month self-life as plain tapioca pearls. You can store them in refrigerator for up to a week in an airtight container.

  • Uncooked mango boba balls can be stored in the freezer for two to three months in an airtight container. You can cook them directly from frozen without thawing.
