One of my favourite ways to enjoy mango chutney is in a grilled cheese sandwich. The sweet mango chutney goes surprisingly well with baked sausages and ooey-gooey melted cheese wrapped in perfectly grilled, golden-brown bread. My Mango & Bhut Jolokia Baked sausage Grilled Cheese Sandwich recipe is a delicious combination of flavours that takes the standard grilled cheese sandwich up a notch. Aside from a bowl of ice cream or something store-bought, I think grilled cheese is probably the fastest comfort food. This grilled cheese also satisfies my need for sweet and salty, as it has sweet chutney and sausage added to the mix. This sandwich really ticks all my boxes for comfort food. I must say, this is among my ultimate grilled cheese sandwiches. I love a good grilled cheese sandwich so much that there can’t be one single at the top of my list.

While you don’t strictly need more flavour in grilled cheese sandwiches, a little extra something-something wouldn’t go amiss. A touch of pesto is tasty, but the combination of sweet and spicy mango & bhut Jolokia sauce Baked sausages and mozzarella is just out of this world, so why not put it to use here? The sweet and hot mango & bhut Jolokia sauce pairs well with the cheeses, so I drizzle about a teaspoon in the sandwich. It not only tastes fabulous, but it also helps the shredded cheese adhere to the bread. The sausage plays well with the sauce and cheese, making the sandwich more hearty and filling. This is good as a quick meal with a salad or a cup of creamy soup or you can make a few sandwiches and cut them into fingers for a cocktail party. Nothing soaks up the booze-woozies better than a grilled cheese.

Ingredients for Mango & Bhut Jolokia Baked sausage Grilled Cheese Sandwich:

  • Bread: Start with a foundation of good bread. Hand-sliced Italian ciabatta, robust sourdough or a rustic French boule add a sophisticated twist to the timeless sandwich. Ciabatta, sourdough or brioche offer unique textures and flavours, yet it’s crucial to ensure the chosen loaf can withstand the heat without crumbling.

     

  • Butter: Using salted butter is a fantastic option, it enhances the savoury flavour.

  • Mango Chutney: Fresh mango chutney is lively, fragrant and packed with flavour. Making it at home allows you to control the tang and sweetness to your liking. While store-bought chutney is an option, homemade chutney offers a personal touch and customizable taste.

  • Bhut Jolokia Sauce: Bhut Jolokia or Ghost pepper sauce brings a fiery kick that perfectly complements the sweetness of the mango chutney. Its intense heat cuts through the sweetness, adding a thrilling spiciness to the sandwich.

  • Rice Vinegar: A splash of rice vinegar adds a tangy kick to the sauce, balancing out the flavours with a bit of acidity.

  • Garlic and Onion powder: These powders infuse the sauce with savoury undertones, enhancing the overall depth of flavour.

  • Mango Ginger: Mango Ginger is also known as Amada. Mango ginger adds a rich, sweet flavour with a subtle floral and pepper notes, similar to raw mango but without the tartness. It adds a delicate aroma and flavour. If mango ginger is unavailable feel free to use regular ginger.

  • Dijon mustard: To balance the sweetness you need a bit of spicy to balance this sauce. You can add more Dijon mustard if you like a spicy BBQ sauce. Regular mustard works too.

  • Sausage: For this recipe, I have used chicken sausage, but any variety will work. Slice the sausages lengthwise without cutting all the way through, allowing them to lay flat for even cooking on a flattop grill.

  • Cheese: Let’s talk about the star of the show- the Cheese. Embrace the mozzarella for its mild flavour and cheese-pulling magic, mozzarella is also known for its non-greasy melting qualities. Preferably freshly grated for optimal flavour. Avoid pre-shredded cheese, as they often contain starch, thickeners, additive and preservatives that can alter the sandwich’s taste.

Serving suggestions:

  • Grilled cheese sandwiches are a comfort food classic, and choosing the right sides can elevate the entire the dining experience. One classic pair is with a bowl of Roasted Tomato Soup. The delightful combination of the warm, gooey sandwich and the tangy, creamy soup creates a comforting and satisfying meal.

  • If you’re in the mood for something crunchy, french Fries or potato wedges make excellent accompaniments. The contrast in texture adds a delightful dimension to the meal.

  • For a refreshing option, consider serving your grilled cheese with a fresh green salad. The crispiness of the greens provides a nice balance to the richness of the sandwich.

  • For those who enjoy a bit of tanginess, coleslaw or refrigerator pickles can offer a refreshing and slightly acidic contrast to the cheesy sandwich.

Ingredients

Mango & Bhut Jolokia Sauce:

  • 4 tbsp Mango Chutney

  • 2 tsp Bhut Jolokia or Ghost pepper sauce

  • 1 tsp Garlic powder

  • 1 tsp Onion powder

  • 1/2 inch Mango Ginger, grated

  • 1 tsp Dijon Mustard

  • 1 tbsp Rice vinegar

Grilled Cheese Sandwich:

  • 2 slices of Italian Bread

  • 4 tbsp Butter

  • 1 cup Mozzarella cheese

  • 4 nos. Sausage

Preparation

Mango & Bhut Jolokia Sauce:

  • Step 1: In a mixing bowl, combine mango chutney, Bhut Jolokia or Ghost pepper sauce, garlic powder, onion powder, grated mango ginger, dijon mustard and rice vinegar, stir to mix everything properly. Keep aside.

Baked Sausages:

  • Step 2: Slice the sausages lengthwise without cutting all the way through, allowing them to lay flat. Then drizzle some mango & bhut jolokia sauce over the sausages.
  • Step 3: Bake the sausages in a preheated oven @230°C for 10-15 minutes. Keep aside.

Grilled Cheese Sandwich:

  • Step 4:  Place the bread slices on a cutting board and spread with a thin layer of butter on each side of the bread. Then layer with some cheese on top of the butter.
  • Step 5: Then drizzle some mango & bhut jolokia sauce over the cheese and arrange the baked sausages over the cheese.
  • Step 6: Then top with some cheese on the baked sausages and drizzle some mango & bhut jolokia sauce over the cheese.
  • Step 7: Place the other slice of bread on top of the cheese. Now bake the sandwich in a preheated oven @230°C for 10-12 minutes.
  • Step 8: Cut and serve immediately. Enjoy!!

Pro tips:

  • Make sure you have all of your ingredients ready to go before you start.

  • Opt for a larger pan and cook the sandwich open on low heat. This method allows the cheese to melt to perfection, achieving a lusciously gooey interior while the exterior attains a delightful golden crispness. Keep the heat consistently low to avoid browning too quickly, patience is the key for the ideal grilled cheese. Resist the temptation to crank up the heat, as a slow deliberate approach yields the best results.

  • Choose thick sliced bread. This thickness contributes to a substantial and satisfying texture, striking the right balance between crispiness and meltiness.

  • When it comes to cheese, freshly grated varieties work wonders, ensuring a superior melt compared to pre-shredded options.

  • Use salted butter for an extra layer of flavour.
