Ingredients
Lychee juice:
1 cup Fresh Lychee (pitted)
Mint Simple Syrup:
1/2 cup Granulated Sugar
1/2 cup Fresh Mint
1 cup Water
Lychee Cosmo:
120 ml Fresh Lychee juice
30 ml Lime juice
30 ml Vodka
30 ml Mint simple syrup
Ice cubes
1 no. Lychee, pitted, for garnish
Preparation
Lychee juice:
- Step 1: In a blender jar add fresh pitted lychees and blend until smooth.


- Step 2: Then strain the fresh lychee juice and keep aside.


Mint Simple Syrup:
- Step 3: In a small saucepan over medium-high heat, bring the water and sugar to a boil, stir to dissolve the sugar.
- Step 4: Then add the fresh mints and cook on lowest possible heat for 10 minutes, until the syrup is slightly reduced and syrupy.
- Step 5: Turn off the heat and allow the syrup cool to room temperature. Discard the mint leaves and store in a glass jar in the refrigerator for up to one month.
Lychee Cosmo:
- Step 6: In a cocktail shaker add lychee juice, lime juice, vodka, mint simple syrup and ice cubes.


- Step 7: Cover and shake vigorously until you have a layer of frost on your shaker. Then strain into a cocktail glass.


- Step 8: Garnish with a lychee and enjoy!!
