2 nos. Lemon
1/2 cup Castor Sugar
Preparation
- Step 1: Zest the lemons by removing the coloured skin and avoid the white pithy portions of the lemons. The pith has a bitter, unpleasant flavour. In a baking tray place the zest.
- Step 2: Bake in a preheated oven @150°C for 10 minutes, until the zest is fragrant and dry but not browned. The zest should be crispy and dry to touch. Remove the zest from oven and permit to cool for 2-3 minutes.
- Step 3: Then combine the sugar and the dried zest until well combined.
- Step 4: Store it in an airtight container for up to 3 months.
