After surviving a scorching heat wave last week and braving the humidity this week, I’ve stumbled upon a lifesaver: Hibiscus and Green Grape Popsicles. Highly recommended, these frozen delights are the ultimate antidote to sweltering temperatures. Crafted with care in the comfort of your kitchen, there’s truly nothing like a homemade popsicles to beat the heat.

Picture this: tangy-sweet, hydrating hibiscus and green grape popsicles, beckoning with their refreshing allure. As the mercury rises, these frozen concoctions offer a blissful respite. The marriage of hibiscus flower and sweet, juicy green grapes seems almost predestined, a natural fit for combating the oppressive heat of summer.

Ingredients for Hibiscus and Green Grape Popsicles:

  • Hibiscus flower: I am using fresh hibiscus flowers, ensuring to remove the green calyx and pistil. Wash the petals thoroughly before steeping them in boiling water to extract their vibrant colour. After a couple minutes, strain out the petals and mix in your preferred sweetener and a pinch of black salt, watching the solution transform into a delightful hue.

  • Green Grapes: Green grapes contribute natural sweetness to the popsicles, eliminating the need for additional sugar. Their juicy, ripe flavour complements the floral notes of the hibiscus, resulting in a refreshing burst of flavour in every bite.

  • Sugar: To enhance the sweetness, add about half a cup of sugar, or opt for the natural sweetness of honey. Keep in mind that zero-calorie sweeteners won’t yield the desired texture.

  • Black salt: A pinch of salt enhances the flavour profile by harmonizing the sweet and sour elements, creating a well-rounded taste sensation with each lick.

How long do they need to freezer?

To ensure thorough freezing, allow at least 4-6 hours, preferably overnight. Patience is key; the wait may seem long, but it guarantees the best results.

Storage tips:

These homemade Hibiscus and Green Grape Popsicles require 24 hours to freeze fully. Keep them in the freezer for 8-12 months; extended storage may cause ice crystals and freezer burn.

Ingredients

  • 1 cup Fresh Hibiscus flowers (Hibiscus rosa-sinensis)

  • 1 cup Water

  • 2 cups Green Grape

  • 1/2 tsp Black Salt

  • 1/2 cup Granulated Sugar

Preparation

  • Step 1: First, remove the calyx ( green part) and pistil (the long tubular part) of the Fresh Hibiscus flowers (Hibiscus rosa-sinensis). Then wash the petals thoroughly with water and keep aside.
  • Step 2: Add water in a saucepan and boil the water. Then turn off the heat and add the washed petals to the saucepan.
  • Step 3: Let the flower steep in hot the water for 15-20 minutes. After 15-20 minutes add the sugar and stir until dissolved.
  • Step 4: Then strain the petals and add black salt and stir to combine. Then pour the hibiscus solution into the popsicles molds, filling halfway and then place the mold in the freezer for 24 hours to freeze.
  • Step 5: Now, add green grapes and black salt into the blender and puree till smooth. Strain it and keep aside. As these grapes are so sweet so I didn’t add any sugar, but if you like feel free to add sugar or any sweetener of your preference.
  • Step 6: After 24 hours pour grape juice to fill up the other half of the popsicle mold. At this point, you should place your popsicle sticks into your mold. Freeze for another 24 hours.
  • Step 7: To unmold the popsicles, simply run the outside of the mold under tap water and pull out the popsicles gently from the mold.
  • Step 8: You can serve them immediately, or place them in a small plastic ziplock bag and put it in the freezer and serve later.

Pro tips:

  • Before you freeze your mixture, savor its taste and fine-tuned it to perfection. Adjust the elements as needed- adjust sweetness.

  • Invest in quality popsicle moulds like BPA and phthalate free.
