Grilled Pineapple with Spiced Rum Caramel makes a simple yet irresistible warm-weather dessert. Juicy pineapple slices are grilled until golden and smoky, then finished with smooth spiced rum caramel. This tropical delight comes together effortlessly on the grill pan, making it a crowd-pleasing treat for cook-outs, dinner parties or casual summer evenings. The contrast of charred pineapple, silky sauce and cold ice cream delivers a refreshing, indulgent bite every time.
Ingredients
1 Fresh Pineapple
For Spiced Rum Caramel:
1/2 cup White Sugar
1/4 cup Heavy Cream
1 tbsp Cinnamon, broken
1/2 of Whole Star Anise
1 tbsp Salted Butter
1/4 cup Dark Rum
Preparation
For Spiced Rum Caramel:
- Step 1: In a saucepan combine heavy cream, cinnamon and star anise. Warm for few minutes. And remove from the heat.
- Step 2: In a pan add sugar in an even layer. Place the pan over medium-high heat and let the sugar melt.
- Step 3: As you see the sugar crystals around the sides of the pan start melt, turn golden and liquefy, gently swirl the pan but DO NOT touch the sugar, while the caramel cooks to ensure the sugar solution caramelizes evenly.
- Step 4: Strain the warm cream and add butter in the frying pan, stir to combine. Then add dark rum and stir to combine until there are absolutely no lumps of sugar or else the caramel will turn grainy once it cools. Keep aside.
For Grilled Pineapple:
- Step 5: Trim & peel pineapple. Cut lengthways into quarters, remove core. Cut each quarter lengthways into thirds.
- Step 6: Heat a grill pan. Add the pineapple wedges to the pan. Grill for 2-3 minutes or until they’re golden brown and have grill marks. Then flip them over and grill another 2-3 minutes. Remove the pineapple from the pan.
- Step 7: Arrange the grilled pineapple wedges on a serving platter. Drizzle the warm spiced rum caramel sauce over the top of pineapple. Serve immediately and Enjoy!!
