Ingredients needed for Grilled Pineapple & Barbecue Chicken:
Chicken: Boneless chicken legs, wings and thighs stay juicy and are less likely to dry out than boneless breasts. Skin-on and bone-in chicken breasts also cook up beautifully.
Fresh Garlic: Freshly minced garlic balances the sweetness with a savory touch, making the marinade more flavourful.
Spices: A blend of ginger powder, onion powder, black pepper powder and paprika powder adds flavour and depth to the marinade.
Soy sauce: Choose low sodium soy sauce so you can better control the amount of salt in the marinade.

Pineapple Puree: Use fresh pineapple puree as the base of the marinade. It adds natural sweetness and helps coat the chicken well.
Fresh Pineapple: Fresh pineapple is the best choice for grilling, but canned pineapple rings cut in half are a convenient alternative and work just as well.
Vegetable oil: Vegetable oil is ideal for grilling because of its high smoke point and neutral flavour, allowing the pineapple flavour to shine without interference.

Ingredients:
500 gm Chicken thighs or breasts, boneless
1/2 cup Homemade Barbecue Sauce
1 tbsp Fresh Garlic, minced
1 tsp Onion Powder
1 tsp Ginger Powder
1 tsp Black pepper powder
1 tsp Paprika Powder
2 tbsp Soy sauce
1/2 cup fresh Pineapple puree
1 no. Fresh Pineapple
Vegetable oil
Preparation:
- Step 1: In a mixing bowl, combine chicken, minced garlic, onion powder, ginger powder, black pepper powder, paprika powder, sot sauce, barbecue sauce and pineapple puree. Mix everything properly and let the chicken rest for at least 30 minutes or overnight.
- Step 2: Slice the pineapple in 1/2-inch rings and remove the skin. Lay the ring down flat on the board. Divide it into quarters by using your knife to cut a giant T, right down the middle. set aside.
- Step 3: Thread the marinated chicken pieces onto skewers- 4-5 pieces each.
- Step 4: Place a grill pan over high heat. Pour oil on the pan and coat evenly with a paper towel.
- Step 5: Once the pan is heated, carefully place the skewers in the pan and cook in batches for 3 minutes on each side until golden.
- Step 6: Add the pineapple wedges to the pan. Grill for 2-3 minutes or until they’re golden brown and have grill marks. Then flip them over and grill another 2-3 minutes. Remove the pineapple from the pan.
- Step 7: Meanwhile, pour the excess marinade into a pan. Bring to a boil and let cook for 4-5 minutes until slightly reduced.
- Step 8: Remove the core of the grilled pineapples. Brush the chicken skewers with reduced barbecue sauce.
- Step 9: Serve immediately the grilled pineapple and chicken skewer with reduced barbecue sauce. Enjoy!!
