An egg sandwich is one of the easiest sandwiches to make, especially with pre-boiled eggs. It’s also perfect for using up leftover eggs. This easy recipe combines soft-boiled eggs, mayonnaise, mustard and cilantro for added colour and flavour. It’s delightful in a sandwich and a picnic favourite.
Ingredients needed for Egg Sandwich:
For my perfect egg sandwich, you’ll need these essentials:
Bread: For the best egg sandwiches, use soft white sandwich bread. Perfect for traditional tea sandwiches. Avoid crusty, chewy breads.
Soft boiled Eggs: I prefer to use soft-boiled eggs to avoid rubbery egg whites. The creamy yolk enhances the sauce, requiring less mayonnaise.
Butter: Whipped butter adds richness, creamy and airy texture to the filling.
Mayonnaise: Mayonnaise adds creaminess and richness to the filling.
Kasundi or Grainy Mustard: Mustard adds flavour and a touch of tang. I have used Kasundi, feel free to use grainy mustard or Dijon mustard.
Cilantro: Cilantro adds freshness, burst of flavour and a pop of green in the filling.
Seasoning: The egg sandwich is simply seasoned with salt and pepper.
Serving suggestions:
Pair classic egg sandwich with a cup of tea or coffee, potato chips, french fries, green salad or coleslaw for a perfect meal.
Storage Tips:
Refrigeration: Store the egg sandwich up to 4 days in the fridge. Store it in a airtight container to keep it fresh.
Freezing: freezing egg sandwich isn’t ideal due to texture and flavour changes.
Ingredients
For toasted Bread crumbs:
4 slices soft White sandwich bread
3 Soft Boiled Eggs
4 tbsp Butter (softened)
2 tbsp Mayonnaise
Salt to taste
1 tsp Grounded Black pepper
1 tsp Kasundi or Grainy Mustard
2 tbsp Cilantro (chopped)
Preparation
- Step 1: In a mixing bowl, add 2 tbsp softened butter and cream the butter using a whisk, until its light and fluffy and changes colour to a pale yellow.


- Step 2: Then add mayonnaise, salt, freshly ground black pepper, kasundi and stir to combine.


- Step 3: Next add the soft-boiled eggs and mash them well with a fork. Add chopped cilantro and stir to combine.


- Step 4: Butter the bread properly. Divide the filling between two slices of bread and spread evenly. Trim the edges (optional), then cut as you wish.


- Step 5: Serve at room temperature, enjoy!!
