Crispy on the outside and tender within, this golden-fried fish pairs perfectly with a vibrant Green Mango Salad that adds a tangy, refreshing bite. Traditionally made with Thai Charcoal-grilled catfish, known as pla duk yang, the dish strikes a delicious balance between rich, savoury flavours and zesty freshness. Served with fluffy steamed rice, it’s a uniquely satisfying Thai classic. With just a few simple ingredients, this dish delivers bold taste and texture in every bite, making it standout favourite that’s both easy to prepare and unforgettable.
Ingredients
250 gm Catfish
Vegetable Oil, for deep frying
Preparation
- Step 1: Heat 1 tbsp oil in a wok, then add the fish chunks, fry until golden on both sides.


- Step 2: Take them out of the pan and transfer onto a plate. Then remove the fish skin and bone.


- Step 3: Transfer the de boned fish chunks onto a chopping board and finely chop using a sharp knife.


- Step 4: Heat oil in a wok over high heat to about 400ºF, for deep fry. Once the oil is hot sprinkle about half of the fish, careful the oil will bubble aggressively. Once the bubbling of the fish starts to slow down and the fish is golden and crispy, fold the fish and lift it from the oil with a slotted skimmer and shake the fish several times and place on a paper towel to drain.


- Step 5: Place the fish on serving plate and serve with Thai Green Mango Salad. Enjoy!!
