Spinach: Fresh baby spinach works best. Though it may seem like a lot at first, it wilts significantly when cooked.
Butter: Unsalted butter adds depth and richness, perfect for sautéing aromatics.
Onion: Red onion pairs well with creamed spinach, adding a hint of sweetness.
Garlic: Minced garlic enhances the dish’s savory profile.
Milk: Whole milk creates the perfect texture f the creamed spinach. Milk lightens up the sauce so the spinach isn’t too thick.
Heavy Cream: Heavy cream forms the rich, velvety base for the sauce, making dish indulgently creamy.
Nutmeg: A touch of freshly grated nutmeg complements the creaminess with a warm. Subtle spice.

Ingredients
2 pound Fresh Spinach
3 tbsp Butter
1 tbsp Garlic (minced)
1 no. Onion (chopped)
1/4 tsp Freshly grated Nutmeg
1 tbsp All-Purpose Flour
1 cup Whole Milk
1/2 cup Heavy Cream
Salt to taste
1 cup Cheddar Cheese (grated)
1/2 cup Butter Cracker, crushed
1 cup Mozzarella Cheese, grated
Preparation
- Step 1: Heat a skillet over medium heat, add the chopped spinach and toss until just wilted. Transfer to a strainer and squeeze out the excess water.


- Step 2: Wipe out the pan and heat 2 tbsp butter over medium heat. Add the minced garlic and sautée for few minutes.


- Step 3: Add the chopped onion and cook, stirring occasionally, for 5-8 minutes, or until soft. Then add freshly grated nutmeg and stir to combine.


- Step 4: Then add flour and cook, stirring constantly, until light golden brown. Slowly stir in milk, bring to a simmer. Stirring constantly and cook fro another 5 minutes.


- Step 5: Add heavy cream, salt to taste, black pepper powder and cheddar cheese, stir to combine. Cook for 5 more minutes.


- Step 6: Add the cooked spinach to the cream sauce, stirring gently to combine. Preheat the oven @180ºC.


- Step 7: Transfer the creamed spinach to a baking tray. Top with some crushed butter cookies, mozzarella cheese and 1 tbsp butter. Bake in the preheated oven for 20-25 minutes or until golden.


- Step 8: Serve immediately. Enjoy!!
