The roots of Chicken Malai Curry can be traced back to the vibrant culture of Bengal, which has a rich history of gastronomy influenced by various invaders and trade routes. Chicken Malai Curry is a harmonious blend of diverse ingredients, each contributing to its unique taste and texture. In Chicken Malai Curry bone-in chicken is used. The use of bone-in pieces enhances the flavour of the curry. Coconut milk is the heart of the dish. Freshly extracted coconut milk is preferred for an authentic taste, but canned coconut milk is a convenient alternative. A combination of aromatic spices like cardamom, cloves and cinnamon is used to infuse the gravy with a fragrant essence. These spices add depth to the dish without overwhelming the palate. Green chili paste is used to add a hint of heat to the dish, which can be adjusted to taste.

Ingredients:
500 gm Bone-in chicken
2 nos. Onion (paste)
2 tbsp Ginger-garlic-green chili paste (1 inch ginger/ 6 cloves of garlic/ 4 green chili)
1 no. Bay leaf
1 no. Green cardamom
1 inch cinnamon
4 nos. Clove
1 tsp Turmeric powder
150 ml 2nd extract of coconut milk
200 ml 1st extract of coconut milk
2 tbsp ghee
Salt to taste
1 tsp Garam Masala
Preparation:
- Step 1: Heat ghee in a wok or pan and add bay leaf, green cardamom, cloves and cinnamon and allow them to sizzle and release their aromatic flavors.

- Step 2: Then add onion paste and fry for about 5-6 minutes until they acquire a gentle brown hue. Following this, incorporate ginger-garlic-green chili paste and continue frying for another 5-6 minutes.

- Step 3: Next add chicken and fry for 8-10 minutes on medium-high heat.

- Step 4: Then add turmeric and fry for 8-10 more minute or until the oil separates.

- Step 5: Now add 2nd extract of coconut milk and salt and mix everything properly. Cover and cook on medium-low heat for 15-20 minutes or until the chicken is cooked.

- Step 6: Once the chicken is cooked, lower the heat and add 1st extract of coconut milk and let the gravy simmer for 6-8 more minutes.

- Step 7: Then sprinkle Bengali Garam masala powder and stir everything properly.

- Step 8: Turn off the heat and your Chicken Malai Curry is ready to be savoured. Chicken Malai Curry pairs perfectly with rice, paratha, Naan or tandoori roti.
