Ingredients needed for Cheesy Chicken Crepes:

  1. Crepes: Making crepes can be a bit time consuming, but you can also prepare them ahead of time and store them for later use. For convenience, you can prepare the crepe batter the night before. Simply cover it and refrigerate overnight. This way you can cook fresh crepes the next morning without the hassle of making the batter. If you prefer you can cook the crepes in advance as well.   2. Chicken Filling:

  • Oil: Use any neutral oil such as vegetable, canola or grapeseed oil for sautéing.

  • Garlic: Garlic adds zingy and aromatic flavour. Chop or mince the garlic cloves before using.

  • Shallot: Shallot enhances the taste and aroma of the filling.

  • Chicken: Use boneless, skinless chicken breast or thigh, cut into small pieces for a tender and flavourful filling.

  • Spinach: Add baby spinach for a nutritious touch and added flavour.

3. Cheese Sauce:

  • Butter: Butter is essential for the richness of the sauce. Whether using salted or unsalted, it creates the creamy base for the sauce.

  • Garlic: Garlic adds aromatic, zingy contribution to the sauce.

  • All-purpose Flour: Acts as a thickening agent, ensuring a smooth and velvety sauce.

  • Milk: Full-fat milk provides creaminess and body to the cheese sauce.

  • Heavy cream: Heavy cream significantly increases richness and creamy texture of the sauce. Heavy cream adds depth of flavour and a richer mouthfeel to the sauce.

  • Seasonings: Freshly grated nutmeg adds subtle warmth, while black pepper contributes a mild kick to balance the flavours.

  • Cheddar Cheese: Use high-quality cheddar cheese for its robust, cheesy flavour, which is key to the sauce’s seasoning.

  • Mozzarella Cheese: Mozzarella is known for its creamy texture and mild flavour, mozzarella ensures a smooth, luscious sauce. Shred it from the block to avoid additives that might affect the sauce’s consistency.

Can Cheesy Chicken Crepes be made ahead of time?

Pre-making crepes saves time, allowing you to focus on assembling the rest of the recipe effortlessly. Prepare the chicken filling the day before and refrigerate. Most of the prep can be done the day before-just save the cheese sauce, assembly and baking for the day of serving.

Storage Tips:

  • Refrigeration: Store leftovers in an airtight container in the fridge for 3-4 days.

  • Reheating: To reheat, preheat you oven to 350°F and bake for 10 minutes or until warmed through. You can also microwave until warmed through.

Ingredients

For Chicken Filling:

  • 500 gm Chicken, boneless

  • 1 tbsp Oil

  • 1 tbsp Garlic, minced

  • 1/2 cup Shallots, finely chopped

  • Salt to taste

  • 1 tsp Black pepper powder

  • 1 cup Baby Spinach

For Cheese Sauce:

  • 2 tbsp Butter

  • 1 tbsp Garlic, minced

  • 1 1/2 tbsp All-purpose flour

  • 2 cup Whole Milk

  • 1 tsp Black pepper powder

  • 1/8 tsp Nutmeg, grated

  • 1/2 cup Heavy Cream

  • 1 cup Cheddar Cheese

Assembling:

  • 1 cup Mozzarella cheese

  • 1 cup Cheddar cheese

  • Fresh Parsley

Preparation

For Chicken Filling:

  • Step 1: In a skillet heat oil, then add garlic and sauté for few minutes. Add chopped shallots and sauté for 5-6 minutes or until golden.
  • Step 2: Then add chicken, salt and pepper and cook for 10-15 minutes or until cooked through. Add baby spinach and cook until wilted. Keep aside.

For Cheese Sauce:

  • Step 3: In a pan, melt butter over medium heat and then add garlic and sauté for few minutes. Add flour and cook, stirring constantly for 1 minutes, until the raw smell is gone.
  • Step 4: Then add milk and mix to dissolve everything properly, until lump free. Then add grated nutmeg, black pepper powder, salt to taste and heavy cream, stir to combine.
  • Step 5: Cook, stirring continuously until thickened a bit. Then turn off the heat and add the cheddar cheese, mix well.

Assemble for Baking:

  • Step 6: Preheat the oven @180ºC. Lay the crepe flat on a chopping board. Spoon a portion of chicken filling onto one side of the crepe. Then ladle some cheese sauce on top and sprinkle some mozzarella cheese. Roll the crepe and repeat with the other crepes.
  • Step 7: Place the rolled crepes carefully in a casserole dish. Drizzle more sauce on top of the crepes and top with cheddar cheese and mozzarella cheese.
  • Step 8: Bake for 10-12 minutes. Garnish with fresh parsley and serve. Enjoy!!
