
Chakli Recipe (Instant & Easy) | Chakralu Recipe


Chakli, a popular snack in Indian cuisine, is a delectable spiral-shaped treat that satisfies both the palate and the soul. This crunchy delight is also known as Murukku in South India, has a rich history dating back centuries and holds a special place in the hearts of Indians. This delectable treat is not only a culinary delight but also holds a significant cultural and historical importance. With its unique spiral or coiled shape and irresistible crunchy texture, Chakli has become a beloved snack not only in south India but across the country and even beyond its borders.
Chakli is traditionally prepared during festivals and special occasions like Diwali, Sankranti and Dasara/ Vijayadashami, symbolizing a sense of celebration and togetherness. Homemade Chakli is always best as you can use organic ingredients. Homemade Chakli stays fresh for longer period than the store bough one. Chakli is a versatile tea-time snack in India. Some popular Chakli variations are, Garlic chakli, methi chakli, butter chakli etc. The core ingredients of Chakli include rice flour and gram flour. Additionally, sesame seeds, cumin seeds, asafoetida and red chili powder commonly added to enhance flavour.
Ingredients
3 cup Rice flour
1 cup Roasted Gram flour
3 tbsp Refined oil, (hot)
3-4 pcs. Green Chili
1 tsp ajwain/ carom seeds
1 tsp Baking soda
2 tbsp ginger, chopped
Salt to taste
Warm water as required
Vegetable oil, for frying
Preparation
Make a paste of green chili, ajwain and ginger with some water and keep aside.
In a mixing bowl combine rice flour, gram flour, salt, hot oil and previously prepared green chili paste. Slowly incorporate water into the mixture. Knead the dough for 5-6 minutes or until you achieve a smooth and crack-free dough. Cover the dough and allow it to rest for 30 minutes.
With your dough ready, its time to shape the chaklis. Now create small logs and load them into the chakli maker and then tightly seal the lid. Start forming the chaklis on a plate or butter paper by pressing them out in a spiral pattern..
Heat oil in a wok, gently slide one chakli into the hot oil at a time.
Fry them on medium-high flame until they become crispy and golden on both sides. Remove from oil once they are done.
Finally once they are cooled enjoy chakli and store the leftovers in an airtight container for later snacking pleasure. Chaklis are perfect accompaniment to tea or as a crunchy snack any time of the day.
Tips:
You can double or triple or even halved the recipe.
For those crispy and crunchy chaklis, add hot oil to the dough and incorporate it in the flour before kneading.
Always fry chakli on medium-high flame. Do not fry chakli at a low heat. This will make them soggy with oil and they will become soft instead of crispy and crunchy. Avoid frying chakli on high heat as this can burn them.
