Caribbean Curry Crab, the official national dish of Tobago, is a flavourful delicacy cooked in a rich curry sauce with coconut milk and aromatic spices. This classic Tobago dish is traditionally served with dumplings made from flour or cassava. This beloved Tobago dish reflects the island’s vibrant culinary culture. However, today I’m preparing the curry crab only and pairing it with rice for a simple yet delicious and satisfying meal.

Ingredients:
5 Small Crab, cleaned
2 tbsp Curry powder
2-4 tbsp Vegetable Oil
Salt to taste
250 ml Coconut Milk
1/4 cup Fresh Cilantro, chopped
Caribbean Green Seasoning:
1 cup Cilantro
8-10 nos. Garlic Clove
3-4 nos. Green Onion
5-6 nos. Pimento peppers or Scotch Bonnet pepper or Jalapeno Pepper
1 inch Ginger
2 tsp Dried Thyme or 1 bunch of Fresh Thyme
2-3 nos. Shallots, chopped
3-4 nos. Aji Challuaruro Amarillo Pepper, sliced
1 tsp Salt
1/4 cup Water
Sazon Seasoning:
1 tbsp Ground Annatto seeds or Achiote powder
1 tbsp Garlic powder
1 tbsp Coriander powder
1 tbsp Cumin powder
2 tsp Dried Oregano
1 tsp Onion powder
1/2 tsp Black pepper powder
1/2 tsp Salt
Preparation:
Caribbean Green Seasoning:
- Step 1: Roughly chop green onions and cilantro. Remove stems from the peppers and slice them. Thinly slice the ginger and Keep aside.

- Step 2: In a blender add chopped shallots, cilantro, garlic cloves, sliced peppers, sliced Aji Challuaruro Amarillo Pepper, sliced ginger, dried thyme, salt and water. Blend until smooth. Keep aside.

Caribbean Curry Crab:
- Step 3: Combine all the ingredients and store in a airtight jar. Keep aside.
Caribbean Curry Crab:
- Step 4: Heat oil in a heavy-bottom pot on medium high heat. Then add the green seasoning and sauté for 5-6 minutes on medium high heat.

- Step 5: Then add curry powder, sazon seasoning and sauté for 6-8 minutes on medium high heat.

- Step 6: Add the crab and sauté for few minutes on medium high heat. Cover and cook for 4-5 minutes on medium high heat.

- Step 7: Then uncover and add coconut milk and salt, stir to combine.

- Step 8: Cover and cook the crab for 10-15 minutes or until the gravy thickens on medium-low heat.

- Step 9: Serve the Caribbean Curry Crab with dumplings or rice. Enjoy!!
