What is Upside-down cake?

An “Upside-down” cake is a cake that is baked “upside-down” in a single pan, with its toppings, often fruit and caramel, placed at the bottom of the pan. Once baked, the cake is flipped out onto a plate, revealing the caramelized topping on top. This technique creates a visually appealing and flavourful dessert, commonly made with pineapple, cherries or apples.

Store leftover caramelized apple upside-down cake in an airtight container in the refrigerator for up to 2 days. For best taste and texture, enjoy the cake the day it’s made- do don’t hesitate to treat yourself to an extra slice.

Ingredients:

For Caramelized Apple Topping:

  • 2 nos. Apple, thinly sliced

  • 75 gm Salted Butter, room temperature

  • 120 gm Brown Sugar

For the Cake:

  • 200 gm All-Purpose Flour

  • 1 tsp Baking powder

  • 1 tsp Ground Cinnamon

  • 1/2 tsp Ground Nutmeg

  • 1/4 tsp Salt

  • 125 gm Butter, room temperature

  • 180 gm Granulated Sugar

  • 2 nos. Egg

  • 125 ml Yoghurt

Preparation:

For Caramelized Apple Topping:

  • Step 1: In a frying pan, melt butter. Then add brown sugar and cook for 2-3 minutes over medium heat, until the sugar is melted.
  • Step 2: Then add the caramel over baking paper in the bottom of the pan and spread evenly.
  • Step 3: Arrange the sliced apples in a pattern on top of the caramel. Set aside.

For the Cake:

  • Step 4: Preheat the oven @180ºC (350°C). Cover bottom of a springform pan with parchment paper. Keep aside.
  • Step 5: In a large mixing bowl, add softened butter and cream the butter on high speed for 2-3 minutes, until light and fluffy.
  • Step 6: Gradually, add in the granulated sugar and continue creaming until really light and fluffy.
  • Step 7: Next beat in the eggs, one at a time, beating well after each addition. Then add the yoghurt and beat well to combine.
  • Step 8: Sift flour, baking powder and salt in the mixing bowl, to get rid of any lumps and mix. Then add grounded cinnamon, grounded nutmeg and mix, until just comes together. Do not overmix.
  • Step 9: Gently spread the cake batter evenly on top of the apples.
  • Step 10: Bake in the preheated oven for 45-55 minutes, until a toothpick inserted in the center comes out clean.
  • Step 11: Let the baked cake cool on a wire rack for 5 minutes and then carefully remove the sides of the springform pan. Then invert the cake on a serving platter and peel off the parchment paper. Let it cool a bit.
  • Step 12: Serve the Caramelized Apple Upside Down Cake with vanilla ice cream or whipped cream. Enjoy!!

Pro tips:

  • I have used Honeycrisp apple. You can use granny smith or Fuji apples.

  • For best results, bring all refrigerated ingredients to room temperature. This helps the batter mix smoothly and evenly.
