Ingredients

  • 2 nos. Pear (ripe & firm)

  • 60 gm Blue Cheese

  • 1/4 cup Dried Cranberries

  • 1/4 cup Walnuts, toasted & chopped

  • 1/4 cup +1 tbsp Fresh Lemon Juice

  • 1/2 cup Apple Cider

  • 30 ml Port Wine

  • 2 tbsp Brown Sugar

  • 1 tsp Black Peppercorn powder

  • 1 tbsp Extra Virgin Olive Oil

Preparation

  • Step 1: In a mug combine, apple cider, port wine and brown sugar, stirring properly to dissolve the sugar.
  • Step 2: In a bowl combine, crumbled blue cheese, dried cranberries and walnuts. Keep aside.
  • Step 3: Peel the pears and slice them lengthwise into halves. With a melon baller, remove the core and seeds from each pear, leaving round well for the filling.
  • Step 4: Arrange the prepared pears in a baking dish, core side up. Toss the pears with 1/4 cup lemon juice to prevent them from turning brown.
  • Step 5: Divide the blue cheese filling among the pears. Sprinkle with black pepper powder and pour the wine mixture over and around the pears and reserve some for later use.
  • Step 6: Preheat the oven @180ºC. Bake the pears, basting occasionally with wine mixture, for 30 minutes or until tender. Set aside until warm.
  • Step 7: Before serving, whisk together extra virgin olive oil, 1 tbsp lemon juice and reserved wine mixture.
  • Step 8: Transfer the pears to a platter and drizzle with wine dressing and serve warm. Enjoy!!
