Opt for a firm white fish like Nile Perch for optimal results, though Indian Salmon or Basa also work wonderfully. Their mild flavour profiles complement the rich butter and aromatic garlic perfectly.

  • Butter: Speaking of butter, don’t hold back! Lots of butter is essential for achieving that indulgent, buttery-garlicky taste that makes this dish so irresistible. When combined with finely chopped garlic, it creates an aroma that tantalizes the senses.

Ingredients:

Fish marination:

  • 1 no. Large Sliver Pompano or Pomfret fish, cleaned

  • Kosher salt

  • 1 tsp Black pepper powder

  • 1 tsp Dried Oregano

  • 1 tsp Dried Rosemary

Lemon Ginger and Garlic Butter Sauce:

  • 1-inch Ginger

  • 4-5 Garlic cloves

  • 20-25 sprigs Fresh Coriander

  • Lemon zest of 1 lemon

  • 1 tsp Red Chili powder

  • 2 tbsp Lemon juice

Preparation:

Lemon Ginger and Garlic Butter Sauce:

  • Step 1: First chop ginger, garlic and fresh coriander. Then finely mince them together.
  • Step 2: Now add the minced herbs in the melted butter.
  • Step 3: Add lemon zest, red chili powder and lemon juice in the herb butter mixture, mix everything properly. Keep aside.

Fish marination:

  • Step 4: Place the cleaned pomfret on chopping board. Cut 3 diagonal incisions on each side of the fish, without cutting through, using a sharp knife. Then place the pomfret in a baking dish.
  • Step 5: Rub the fish with salt, black pepper powder, dried oregano and dried rosemary on the outside and lightly on the inside.

     

Baking the Fish:

  • Step 6: Preheat the oven to 200°C/400°F.
  • Step 7: Drizzle the sauce all over the fish, making sure to coat the fish properly.
  • Step 8: Cover the baking dish with aluminium foil.
  • Step 9: Place it in the preheated oven and bake for 30-35 minutes.
  • Step 10: Serve hot with steamed rice, grilled vegetables and mashed potato. Enjoy!
