Ingredients:

  • 400 gm bone in chicken

  • 1 medium tomato (puree)

  • 2-3 garlic cloves (minced)

  • 2 tbsp red chili paste / hotsauce (adjust according to your taste)

  • 1 tsp apple cider vinegar

  • 200 gm peach preserve

  • 100 gm ketchup

  • 2 tsp black pepper powder

  • 1 tbsp olive oil

  • ½ cup coriander leaves, chopped

Preparation:

  • Step 1: Arrange the chicken in a single layer in the baking dish. Then season the chicken with salt and blackpepper powder.
  • Step 2: In a bowl or in a cup, whisk together the peach preserve, tomato puree, ketchup, red chili paste, minced garlic, apple cider vinegar, salt and water as required. Then mix everything properly.
  • Step 3: Then pour the mixture over the chicken .
  • Step 4: Next drizzle the olive oil over the chicken.
  • Step 5: Preheat the oven @200° c/400°F. Then bake the chicken for 35-40 minutes or until it is cooked through.
  • Step 6: Sprinkle the chopped coriander leaves for extra flavour.
  • Step 7: Serve the chicken with creamy mashed potatoes, crusty bread, on a bed of rice or pasta, salad or roasted root vegetables.
