Elote Recipe | Mexican Street Corn | Kitchenstagram
Looking for a delicious way to enjoy corn on the cob? Elote, the iconic Mexican street corn, is a must-try! This popular street food features sweet, tender corn charred on the grill and generously coated with a creamy, spicy sauce, then finished with cheese, chili powder and a squeeze of lime. Every bite brings together smoky, tangy, creamy and bold flavours that make this dish truly irresistible.
The word Elote means “corn cob” in Spanish. Traditionally, Mexican Elote is prepared by grilling whole ears of corn until lightly charred, then slathering them with a creamy mayonnaise-based sauce flavoured with chili and garlic and sprinkled with Cojita Cheese. It makes a wonderful side dish for barbecues, potlucks and outdoor gatherings.
Elotes, along with esquites ( Mexican street corn served off the cob), are popular street foods sold from carts throughout Mexico, much like hot dogs in Manhattan. Its delicious combination of sweet corn, creamy sauce, spice, cheese and lime made it a memorable favourite that I could never resist.
What can you use instead of Cotija Cheese?
If fresh cotija cheese is unavailable, feta makes an excellent alternative, as both have a similar salty, pungent taste. Traditionally made from sheep’s milk or combination of sheep’s and goat’s milk, feta works well as a substitute. Parmesan or Romano cheese are also good options when Cotija cheese is not available.
Make Ahead and Storage Tips:
Make ahead: For easier preparation, cook the con and let it cool before storing it covered in the refrigerator. Prepare the topping ingredients separately and refrigerate them. When ready to serve, brush the corn with melted butter and grill over medium-high heat untl lightly charred. Spread the topping over the corn and serve.
Freezing: To freeze the corn, blanch the cobs in boiling water for a few minutes. Remove and cool completely before transferring to a freezer-safe container. Freeze for up to 6 months. Thaw overnight in the refrigerator, then brush with melted butter and grill over medium-high heat until charred. Add the toppings and serve immediately.
