Chicken Chashu Donburi | Japanese Chicken Rice Bowl | Kitchenstagram
Chicken Chashu Don is a comforting Japanese Rice Bowl that brings together tender, sweet-savory chicken and warm steamed rice in a simple yet satisfying way. The chicken is cooked slowly in a fragrant braising liquid until it becomes incredibly soft, allowing the flavours to soak deep into the meat. Once ready, the succulent slices are placed over a generous bowl of rice and finished with fresh garnishes that add brightness and contrast.
This dish belongs to the family of Japanese rice bowls known as donburi. In Japanese cuisine, donburi refers to both the meal and meal and the bowl used serve it. The concept is straightforward, a hearty topping layered over rice to create a complete, balanced dish in a single bowl. Toppings may include meat, seafood, eggs or vegetables, gently simmered in a flavourful sauce before being served.
The sauce used in donburi preparations often combines elements of Japanese pantry staples such as broth, soy sauce and sweet rice wine. The exact balance changes depending on the type of topping and regional preferences. This flexible approach is one reason donburi dishes are so widely loved- they can be adapted easily and even prepared using leftovers.

The chicken absorbs the sweet and salty notes of the braising liquid while aromatic spices add depth to the dish. After cooking, thin slices or chunks are arranged over hot rice, creating a deeply satisfying base.
What makes Chashu Don especially appealing is the mix of textures and flavours layered into the bowl. Crisp vegetables, and soft ramen style eggs complement the rich chicken beautifully. Fresh spring onions and grated radish add brightness and a mild sharpness that cuts through the richness of the meat.
The result is a well-rounded meal that is comforting, flavourful and visually appealing. Each spoonful delivers warm rice, tender chicken and refreshing toppings together- making Chashu Don a perfect example of the balance and simplicity that define Japanese home-style cooking.

Serving Suggestions:
Spoon the tender Chicken Chashu and its rich sauce over a bowl of freshly steamed rice and finish with toppings that add colour, crunch and freshness. A soft Ramen egg makes it extra satisfying. Balance the richness with crisp vegetables like cabbage, cucumber, radish or carrots. For extra texture add sesame seeds. You can also add lightly steamed greens, edamame or a sheet of nori to give the bowl a comforting Japanese-style finish.
Storage Tips:
- Refrigeration: I don’t recommend storing assembled rice dishes. But keep the cooked chicken along with a little of its cooking broth in a sealed container in the refrigerator. It stays good for several days and can be gently reheated when needed, if the rice bowl has already been assembled, it is best consumed the next day as the texture of the rice and toppings changes quickly.
- Freezing: The cooked chicken freezes well. Store it with some of the braising liquid in a freezer-safe container to help maintain moisture and flavour. Properly stored, it can remain in the freezer for a few months and can be reheated directly after thawing overnight in the refrigerator. The remaining cooking broth can also be frozen separately. It works beautifully as a flavourful base for rice, soups or even for soaking boiled eggs to create quick marinated eggs later.
