Cinnamon Apple Filling:
3 nos. Apple
100 gm Brown Sugar
1 tsp Ground Ginger
1 tsp Ground Cinnamon
For Cake Batter:
125 gm All-Purpose Flour
70 gm powdered Sugar
2 tbsp Sour Cream
2 tbsp Vegetable Oil
1 no. Egg
2 tsp Vanilla
1 tsp Baking Soda
1/2 tsp Salt
For vanilla Glaze:
170 gm Icing Sugar
1 tsp Vanilla
2-3 tbsp Milk
Preparation:
- Step 1: Preheat your oven to 350ºF or 180ºC. Grease your loaf pan and line with parchment paper.
- Step 2: Core and chop the apples into dices, transfer to a mixing bowl and add ginger powder, cinnamon powder and brown sugar, stir to combine. Set aside.
- Step 3: In a large mixing bowl, whisk together sour cream, vegetable oil, egg, vanilla until well combined. Add powdered sugar and whisk until well combined.
- Step 4: Sift flour, baking soda and salt in the mixing bowl, add 1/2 of the amount of apple-cinnamon mixture into the batter and mix, until just comes together. Do not overmix.
- Step 5: Then pour the cake batter into the prepared loaf pan. Top the cake batter with the remaining 1/2 of the apple-cinnamon mixture.
- Step 6: Bake in the preheated oven for 50-55 minutes or until a toothpick inserted in the center comes out clean.
- Step 7: Let the baked cake cool in the pan for at least 15 minutes and then transfer to a wire rack and let it cool for an hour or until it’s room temperature.
- Step 8: In a small mixing bowl, whisk together icing sugar, vanilla and milk until it comes to a smooth consistency.
- Step 9: Generously drizzle the glaze over the Apple Fritter Cake and let the glaze setup for about 30 minutes before serving.
